In 1 tsp ry 1 hand full of chopped baby meithi/fenugreek leaves with 1 very finely chopped medium onion until golden.
Add 2 tsp ginger garlic and fry.
Add 150gms lean lamb mince and brown well.
Add 1.5 to 2 tsp chilli powder, half tsp turmeric, 1tsp black mustard and cumin powder mixed with salt and fry well till the oil comes on top.
Add 1/2 glass water and cook the mince on sim for 20 mins till all the water dries up and brown the mince well.
Leave to cool
For Cutlets Coating.
Beat 1 egg in a bowl and keep aside and season with salt and pepper.
In the food processor make bread crumbs from 2 slices of bread preferably the ends.
Mix the cooked mince and potato mash together and form the cutlets.
Put into the fridge for 1hour to cool this helps to keep the shape.
Dip the cooked cutlets into the beaten egg and breadcrumbs and shallow fry till golden.
drain on kitchen towel.
